WHere is a simplified interpretation of a drink featured on a new cocktail list. Designed as a batch premix that's packed with the flavours of a holiday season, which makes it perfect for hosting a festive gathering. Reserve the remaining cordial you can use for breakfast cocktails, desserts, or for additional servings of this cocktail.

Ingredients for the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Premix (produces 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Method
Making the Citrus Syrup: Put every ingredients into a pot, bring to a gentle boil, mixing to dissolve. Then, take off the heat and let it to cool entirely. Pour into a sterilised bottle, cap it and store chilled, where it will keep for around a month.
Preparing the Batch Mix: Mix the specified liquid ingredients into one sizeable container, let it rest for 60 minutes, then strain preferably using muslin, making it fully clarified.
To serve: Add 85ml of your batch mix into your cocktail shaker packed with ice, and agitate lightly for a minute to chill. Strain to a chilled martini glass or a similar vessel, decorate with the cranberries and complete it using a brief mist of mandarin oil over the top.
